We all know how challenging the last 18 months have been. Nearly 1 in 5 have faced food insecurity in the pandemic’s wake. Thousands of us have lost friends and loved ones. According to Oregon State University, the total number of Oregonians that currently are experiencing – or are likely to soon experience – food insecurity, has doubled. Meaning, as many as 1 in 4 Oregonians or an additional 540,000-800,000 of our neighbors are turning to local food pantries, many for the first time. Along with food insecurity, the unemployment rate in Oregon has doubled, it is especially important that we look to one another for support. We will emerge stronger, together.
