In Ginja Ninja, whole-pressed raw ginger and 100% fresh-pressed Northwest apples spar for a balance of zip, zing, sweetness, and bite with tons of aromatic intensity.
Rather than using ginger extract or powder, which would result in lower aromatics and a more harsh profile, we put raw, unpasteurized juice right into the fermentation tank, and ferment cold to preserve the full force of its spicy kick.
